There’s More in That Bag Than You Think • Plus a 20% Surprise Inside
When you pick up a package of freeze-dried food, one of the first things you notice is how incredibly light it is.
Don’t let that fool you.
Fresh fruits and vegetables naturally contain a tremendous amount of water. Freeze-drying removes that water while leaving the food behind, along with most of its nutrition. Add water back, and that lightweight package can become a surprisingly substantial amount of food.
We think that’s one of the coolest things about freeze-dried food, and something many people simply don’t realize.
A Cup Isn’t Always Just a Cup
Depending on the food, reconstitution can substantially increase the amount you have. With some of the foods we freeze-dry, we’ve found the reconstituted amount can be around three times the freeze-dried volume.
For example:
2½ cups freeze-dried → approximately 7 cups reconstituted
The exact amount varies by food and how much water it absorbs, but it puts that lightweight package into perspective. For most of our items, the amount you receive in the package can be multiplied by three.
When shopping for freeze-dried food, don’t judge what you’re getting simply by the weight or size of the package.
Bell Peppers: Convenience Without the Waste
Our newest added item is garden fresh bell peppers. Our freeze-dried bell peppers are already prepared, diced and ready to use.
You can reconstitute them with water, but you don’t necessarily need to. Making chili, soup, scrambled eggs, an omelet or a casserole? Toss them directly into the dish and let them absorb moisture while everything cooks.
Need only a handful? Take out what you need and reseal the package.
No washing. No cutting. No half-used bell pepper slowly going bad in the refrigerator.
That’s farm food with convenience built right in.
Don’t Overlook the Peas!
Our freeze-dried peas are light, crunchy and naturally delicious straight from the package. They make a great snack, but they’re also incredibly versatile.
Eat them crunchy, toss them directly into soups and other dishes, or add water to reconstitute them when you want something closer to a traditional pea.
That’s one of the things we love about freeze-drying: the same food can be enjoyed in completely different ways.
Our granddaughter wouldn't eat cooked peas, but when they are freeze-dried, she literally eats them all throughout the day, now that is a great and healthy snack!
Then There Are Our Freeze-Dried Eggs
Eggs are especially important to us at Back Forty Farms.
We raise hundreds of chickens here on the farm, and our farm-fresh eggs have even been featured on the Today Show, NPR and other media outlets.
Freeze-drying allows us to preserve those eggs while making them incredibly convenient. Reconstitute what you need for scrambled eggs, baking, cooking or recipes calling for eggs.
They’re great for the pantry, camping, hiking, RVing, emergency food supplies or simply those mornings when somebody used the last fresh egg.
Our freeze-dried chicken eggs (and all other foods) lasts for 20+ years and are an amazing protein to always have available.
With Freeze-Dried Food, You’re Buying Food—Not Water
This is one of the easiest ways to understand the value of freeze-dried food.
Much of the weight of fresh produce, and other foods, is water. Once that water is removed, the food becomes remarkably lightweight.
So comparing a few ounces of freeze-dried vegetables with a few ounces of fresh vegetables isn’t a good comparison.
We don’t need to package and ship all that water to you. You simply add it back when you need it.
A lightweight package may represent a surprisingly substantial amount of fresh food before the water was removed, usually 3x the freeze-dried weight.
Use What You Need. Save the Rest.
How many times have you purchased fresh produce for a recipe, used part of it and eventually thrown the rest away?
Freeze-dried ingredients give you another option.
Need a handful of diced peppers? Take a handful.
Need some peas for tonight’s soup? Use what you need.
Need eggs for a recipe? Reconstitute the amount you want.
Then properly reseal the rest for another day.
Less preparation. Less waste. More convenience.

Freeze-drying is an amazing way to preserve food, but the quality of the finished product starts with the quality of the food itself. This is the most critical part.
At Back Forty Farms, the produce we grow is raised without pesticides, poisons, Roundup, chemicals or herbicides.
Our peppers, peas, zucchini, herbs and other farm-grown foods are tended throughout the growing season and harvested by hand. Then we prepare and freeze-dry them right here on the farm.
For us, knowing where our food comes from is the most important thing.
We know where it was grown.
We know how it was grown.
We know how it was harvested.
We know what is NOT in the food we offer.
We know what went into the package.
