We have something new coming from the garden at Back Forty Farms, and this one truly surprised us.
Organic Freeze-Dried Kale Powder is coming to the Country Store!
We start with organic kale grown right here on the farm. After harvesting, the kale is freeze-dried and then hand-ground in small batches using a mortar and pestle.
No fillers. No preservatives. No added ingredients.
Just 100% organic kale.
Don't Let 1 Ounce Fool You
This was the part that surprised us.
Before grinding, just ONE OUNCE of our freeze-dried kale fills a half-gallon container!
That's a whole lot of leafy greens going into one little 1-ounce bag.
Once we hand-grind the kale, it becomes an incredibly convenient way to add greens to everyday foods without washing, chopping, cooking, or having another bag of fresh kale slowly dying in the back of the refrigerator.
Start With Just ½ Teaspoon
A little goes a long way.
We recommend starting with ½ teaspoon and adding more according to your taste and dietary needs. This is nearly a months supply!
Try it in smoothies, scrambled eggs, soups, stews, pasta sauces, breads, dips, casseroles, or anywhere else you want an easy addition of leafy greens.
Why Kale?
Kale is one of the most nutrient-dense leafy green vegetables. It naturally provides vitamin K, vitamin C, vitamin A and beta-carotene, lutein, zeaxanthin, folate, vitamin B6, manganese, dietary fiber, antioxidants, and other naturally occurring plant compounds.
These nutrients play important roles in normal immune function, eye health, bone health, digestion, and antioxidant protection as part of a healthy, balanced diet.
Kale is also a cruciferous vegetable, in the same family as broccoli, cabbage, Brussels sprouts, and cauliflower.

We grow the kale. We harvest it. We freeze-dry it, and even grinding it by hand with a mortar and pestle. That's about as small-batch as it gets.
Our first batches will be available in 1-ounce bags, and because of the amount of kale and hands-on work required to produce each bag, quantities will be limited.

Important Note
Kale is naturally high in vitamin K. If you take warfarin (Coumadin®) or another medication affected by vitamin K intake, talk with your healthcare professional before significantly changing your intake of kale or other vitamin-K-rich foods. People taking warfarin are generally advised to keep their vitamin K intake consistent.
